Ingredients

Filling

  • 2 pounds ripe pears about four
  • 2 pounds tart, firm apples about six medium
  • 3/4 cup dried cranberries
  • 1 teaspoon grated orange zest
  • 1 teaspoon grated lemon zest
  • 1 tablespoon freshly squeezed orange juice
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons apple cider
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Topping

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar lightly packed
  • 1/2 teaspoon kosher salt
  • 1 cup old-fashioned oatmeal
  • 1/2 pound (2 sticks) cold unsalted butter diced

Instructions

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C).
  • Prepare the Filling:
    Peel and core the pears and apples, then cut them into large chunks.
    In a large bowl, toss the fruit with cranberries, orange zest, lemon zest, orange juice, lemon juice, and apple cider.
    In a separate bowl, mix the sugar, flour, cinnamon, and nutmeg.
    Sprinkle this mixture over the fruit and toss to coat.
    Pour the fruit mixture into a 9x12x2-inch baking dish.
  • Make the Topping:
    Combine the flour, granulated sugar, brown sugar, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with a paddle attachment.
    Mix on low speed for 1–2 minutes, or until the mixture forms large crumbles.
  • Assemble and Bake:
    Sprinkle the topping evenly over the fruit, ensuring full coverage.
    Place the baking dish on a parchment-lined sheet pan to catch any drips.
    Bake for 50 minutes to 1 hour, or until the topping is golden brown and the fruit is bubbly.
  • Serve:
    Serve warm on its own or with a scoop of vanilla ice cream or dollop of whipped cream.
